Leftover Leftovers

Saturday got off to a good start, but then hit a rough patch. I woke up around 6:30 and proceeded to take the pooch for a 40 minute walk before the storm was to set in around 8am. Upon arriving home I made some breakfast to fuel me through a 9am yoga class.

Breakfast:

Great Harvest Oregon Herb toast with barney butter and crofters jam. With some green tea.

Made it to 9am yoga and then headed over to the gym for some kickboxing. I was about 20 minutes late but got a good 30 minutes in. Then I ran around town on some grocery errands for tomorrows festivities and my mom. She was in need of some ingredients to make her minestrone soup. After a blip in my morning mood due to other sources, I was in need of a pick-me-up. So I picked up a bunch of daffodils at Tj’s!

I stuck them into my favorite drinking jar in hopes that they will bloom the next day. Because my errands took so long , I had just enough time to grab a quick shower and have a snack before heading to work.

Lunch:

5 Marys Crackers, some strawbs and hummus. + a few chips after 🙂

Then I threw together a quick dinner for work and called it a night. Work was really busy when I got there but died down finally around 8, which is kind of late for a Saturday night. Usually people are home having dinner or getting ready to go out, but apparently that didn’t happen.

Snack:

On my first break around 6 I had some of the usual trail mix to tide me over until my lunch at 8:30.

Dinner:

last of leftover burrito, greek yogurt, romaine & spinach salad with red pepper with balsamic.

This burrito is SO tasty even at a few days old. I love adding greek yogurt to it and using it as sour cream. I added the salad to get some greens in for the day. Then after that I had a few chocolate morsels for sweetness.

Once I got off work I hit up the grocery store for a few things I forgot to grab earlier. It was crazy! There were so many cops in the parking lot because they were looking for some criminal! It was scary, but at the same time I felt even safer since there were so many around.

Who Does That?!

Today at work I left my Tupperware in front of the toaster in the break room while my muffin was toasting. I walked away for literally 2 minutes to come back and find the top of my Tupperware is missing. Apparently people think it’s OK to take things that aren’t theirs and use them. This fool took my top, threw his CHICKEN breast on top and tossed it in the microwave! HELLO! It’s not yours! And that was for my muffin, not your chicken. I was wicked pissed at this guy ( who is new, but still! ) and had to go wash it out because he left lettuce on it and chicken juice. I even had to wash the main container out because he put his chicken in there first and then changed his mind! WHO DOES THAT?!

I didn’t get around to the Vegas write up. That’s the goal for tomorrow. I’m excited for the company party on Friday too! I think the boyfriend is coming. Breakfast was just an english muff with pumpkin butter with a side of assorted fruit. Lunch was a banana with Barney Butter and dinner was delicious!

I took some of the pesto the boy gave me and smeared it on some honey whole wheat bread from the market. On the other side I smeared some jalapeno/cilantro hummus. Then topped with peppercinis and spinach. Lastly I mashed some of the chickpeas from last night to give the sammich some bulk. It was so good!

It was a thick sammie! Paired with some iced tea, 1/2 pickle and some grapies!

On to the next!

Off Day

Took the day off physically. I just didn’t want to drive all the way back to the gym since I am house sitting. But I kept it light today. Considering today a rest day, and just did my 20 minute walk on my lunch break. The rest of the day was spent catching up on business-y things and watering plants. At work we were audited by our biggest customer, so everyone was on their best behavior, but surprisingly in a good mood! Shocking! I had to keep everything hidden in my desk and sneak it like a mouse all morning. But for breakfast I had some good ol’ oats with PB, Crofters, Ezekiel Cereal, blueberries and some strawbs!

Then for slunch around 1:30 I had 2 Dr. Krackers, 3 cashews, 1/3 of a Laughing cow and this juicy plum I got for free at the market Saturday, it was absolutely perfect ripeness.

Perfecto!

Then I made my dinner this morning and photographed it at 4:45 am because I didn’t think I would be taking the day off. But it was the most delicious salad with the best homemade dressing ever. I’m so thrilled my uncles have a costco sized jar of minced garlic!

Followed by a few glasses of pinot grigio… a few..

Hopefully I will get a good nights sleep for once!

Meetings

Today feels like a Friday, it just has the vibe. Boss lady was in a meeting most of the morning, I think they are cutting our overtime hours. That’s great for me- I will hopefully regain a social life, but bad news for my friends who really need the dough. It was a lovely day outside before the gusting winds picked up. We had the garage door open in the warehouse so I got to see some sunshine! Sometimes I feel like a caged animal there in a zoo.

This lunch is a repeat offender. Like breakfast I was short on time this morning and knew I needed to eat my veggies before they started to go bad. An asparagus, red pepper, hummus on the heel of whole wheat bread. I used to hate the crusts of bread, but now it’s my favorite part! (note to self: make bread pudding very soon).

I also had 1/2 of a mandarin orange [not pictured] because the other half had gone bad.

Then after work I went on a walk before I headed off to the boys house. Since I wasn’t too hungry I just had some chips (my unhealthy arch nemisis, but I LOVE them) with some scrumptious hummus.

Organic low-fat blue corn and TJ Salsa Chips served on a napkin. Class. Pure class.

Off to the boys house for some playtime and fro-yo.
